You want a Head with high HP/SA/SD, so basically a special tank with health, and a Body with high PA/PD/SP, a physical tank with speed. Your fusions would be best as Charizard Head/Golem Body for that decent SA/SD and Golem's massive Defense, but it'll be pretty slow and Rock/Flying (or Ground/Fire?
Seeds of destruction song. Still a bit iffy on fusion mechanics) and either Blaze or Rock Head. Machamp as a body is also damn good with high Attack/Defense and middling Speed, while a Raichu Head means good Special Attack/Defense, but lower-than-average health. Don't worry though, a fusion process overhaul and a new 'defuser' item/option are coming out in the v4 patch, which you can beta on PIF's Discord. As a general Rule of Thumb, any Physical Sweeper Body and Special Tank(/Sweeper for extra Speed?) Head will work for a typical offense-focused playthrough (since playing stall/defensively would take WAY longer), though the fusion will have not-so-great Defense/HP(/Special Defense if Special Sweeper Head is used) as a result, so caveat emptor on all this. For example, Caterdle (Caterpie Head/Weedle Body) gives you Physical Sweeper Beedrill and Special Tank/Sweeper Butterfree, AND both of their movesets. But since the Body has evolution priority, make sure the Head evolves at level 10 or you miss out on Confusion. Also, it'll probably be a Bug/Poison type with either Swarm or Compoundeyes, so check its ability after it evolves. Also, I've heard that Fusions have a passive +25% bonus to their highest stat to encourage their use.
I don't know if this is true, visible in the stat screen or uses Base Stats or Actual Stats after IV's and EV's to calculate, but I DO know that you can fuse Pokemon in the same family together. So, if you fuse an Eevee with a Jolteon and evolve it with a Thunderstone, you should get either a normal Jolteon or a Jolteon/Jolteon fusion with +25% Speed, its highest stat. Someone check this with a Metapod/Butterfree or something like that and let me know, will ya?.
